Are the photos made smaller?

Photos go onto A4 pages at their own quality. Only if you choose a maximum size and the file goes over it are the images recompressed until it fits.

Do iPhone photos (HEIC) work?

Yes, in any browser: they're converted to JPG automatically when you add them.

Are my documents sent to a server?

No. The PDF is created in your browser and your documents never leave your device.
